Ruthann's Ginger Squares

Didn't we have fun on Sunday? Check out the Gallery page for pictures of last year's Block of the Month. You will see the same 12 blocks put together 19 different ways....great job ladies! Thank you to Judy, Ruthann and Debbie, for their treats. As promised, here is Ruthann's Sugar Ginger Squares.

1 cup brown sugar

1/2 cup butter or margarine

Heat slowly until sugar is melted. Do not cook or boil. Allow to cool. Then add:

1 cup cut-up ginger in syrup (available at the Bulk Barn) Crystalized ginger is not a good substitute.

Mix in 1 egg and 1 tsp vanilla.

Add 1 cup flour and 1 tsp baking powder, pinch of salt.

Place in ungreased 8x8 pan or mini muffin tins (bake mini's for 15 miniutes)

Bake squares at 350 degrees for 20 minutes.
